This is a cookbook dealing with unfamiliar French , names, terminology and techniques and there are no pictures; if you don't know what the dish is i. Also, IMHO, the author made recipe preparation more difficult than necessary.

  • I'm a pro co Not for beginners, maybe even need to be advanced cook. I'm a pro cook, not a chef again IMHO, chefs tend to be rigid and obsessed by the need to make things the exact same way time after time after time- so boring in the real world, and I have read several hundred cookbooks and own at least I can usually read a recipe and tell how it will come out.

    The recipes in this book are so short of explanation that even though I can easily figure out the recipes themselves I still have no idea what some of them are supposed to be. This cookbook is not for me.

    You can't go wrong with wilted-not-soggy greens and fried country ham. Believe it or not, we came up with a new way to chop broccoli: Include the stems! A good grill pan means you can have this warm shrimp salad without a barbecue grill. This light salad gets heft and creaminess from the soft egg.
